The Cortese and Favorita grapes for this wine are fermented in a "white wine method" meaning only the pure must is fermented at low temperatures in stainless-steel tanks. The small percentage of the fragrant Moscato is left on the skins for five days as primary fermentation commences. The three varieties are blended following primary fermentation and subsequently aged for 4-5 months in stainless steel on the fine lees. The result is a textured, vibrant white with aromas of peach, apricot, and mint. It's persistent on the palate, with subtle pithy fruit a long saline finish. Absolutely ferfect for an apero hour, and super dynamic with food.
