About the wine:
The 2019 season in Provence was marked by particularly hot and dry weather but the terroirs located in the inner valleys benefited from some welcome showers at the beginning of September, allowing the grapes to reach full maturity. Harvesting then took place in a particularly clement spell of weather which directly contributed to the quality of the crop.
Soil: Clay and silt, rich in limestone
Vinification: Varietals harvested individually in small lots. Grapes are sorted. Cold skin maceration completed for 5 days. Thermoregulated fermentation at 24 C (75 F). Fining.
Aging: Aged in stainless steel vats
Varietal Composition: 70% Syrah; 30% Cabernet Sauvignon
Alcohol: 14.5%
Tasting Notes: Purple color with violet tints. The first nose reveals notes of ripe Syrah: liquorice, pepper and peony give way to a beautiful procession of small red and black fruits. The palate is very mature and has good body, supported by velvety tannins and a melted acidity. Intense flavors of red fruit, blackberry and spices combine on the palate until the round and fleshy finish.
Serving Suggestions: Serve between 14-15 C (57-59 F). Cheese pairing: goat cheese or Camembert wrapped with pastry and then baked.
