Neversink Spirits Select Cask Finished Bourbon Whiskey

Neversink Select is a wheated bourbon produced by Neversink Spirits in Port Chester, NY. Indiana-distilled wheated bourbon with a mash bill of 51% corn, 45% wheat, and 4% barley is aged 4 years in new American oak before making its way to New York for additional aging by Neversink. The matured whiskey is finished for an additional 3 months in 60-gallon French oak casks which previously held Neversink’s Apple Apéritif. The nose displays aromas of toasted corn, pineapple, celeriac, marzipan, red apple, and burnt peanut. Toasted corn echoes on the palate along with elderberry, strawberry, coffee blossom, caramel apple, and raspberry. Bourbon proves itself the perfect canvas for the orchard fruit character imparted by the finishing casks, showcasing mellow wheat nuance with structural spice, vanilla, and the perfect hint of sweetness closing out every sip. Non-chill filtered; 43% ABV.
