La garagista "Vinu Jancu" 2019
The La Crescent was handpicked from our West Addison vineyard at the end of September, after a near perfect growing season with plenty of sunshine. The fruit was hand-destemmed and sorted then foot~crushed. Fermentation on skins took place in open vats for 4 weeks with native yeast. Elévage was partially in anfora made in Montreal with local Champlain Sea clay and demijohns, and over a one year. One year in bottle. No sulfur or other additions.
