Garcia Perez Bobal Tinto
100% Bobal, organically grown on clay covered with limestone soils at an elevation of 850m. These are 20 year old bush vines, located in the Manchuela region and hand-harvested in early September to preserve freshness. Spontaneous fermentation with native yeasts in small 1,000L plastic vats with manual punchdowns up to 3 times per day until natural settling occurs. Minimal aging. Bottled unfined, unfiltered, with zero SO2. Under 12% abv and easily chillable as well!
