Domaine de la Cotelleraie's "Les Perruches" is a single-vineyard Cabernet Franc from organically certified vines planted in 1975. Hand-harvested and fermented with indigenous yeast in large wooden vats, this wine undergoes extended maceration and 15 months of aging in older barrels. The terroir—clayey-sand soils with distinctive flint gravels—imparts mineral character typical of Loire Valley Cabernet Franc. A thoughtfully crafted expression of place and tradition.
