From 10-30 year old vines planted to 20ha of predominantly granite soils, the grapes are hand-harvested in September, de-stemmed and allowed to spontaneously ferment in underground cement vats using ambient yeasts for three weeks with temperature control. Aged for seven months on lees with weekly stirring.
