Soil: Clay on shale Age of the vines: between 10 and 35 years depending on the grape variety Grapes: 50% Pineau d'Aunis, 30% Grolleau, 20% Sauvignon Blanc
Vinification: Direct pressing for Pineau D'Aunis and Sauvignon Blanc then fermentation in tank. Destemmed maceration for the Grolleau gris.
