Chateau Saint Paul Haut-Medoc 2021
Spontaneous fermentation for this Cabernet dominant blend takes place in cement and stainless steel vats for 30 days. The wine is then moved to barrels to finish malolactic fermentation and rests for 12 months before release (20% new barrels; 80% old barrels). It shows rich, brambly fruit with woodsy undertones (think balsam wood). It has the richness to play the perfect "steak house red", and yet it is vibrant and mellow enough to be the "cozy blanket" to sip on chilly winter nights.
