Additionally, they grow Chardonnay in the villages of Chavot, Fontaine-sur-Aÿ and Cramant, where the soils are shallow and lay over pure chalk close to the surface, producing mineral-driven wines with undeniable finesse.\u003c\/li\u003e\n\u003cli\u003eThe Telliers farm their vineyards organically. Harvests are done by hand, and the grapes are gently pressed with only the free-run juice kept for the production of their wines. All the wines are vinified and aged in oak barrels,\u003cspan\u003e \u003c\/span\u003e\u003cem\u003edemi-muids\u003c\/em\u003e and \u003cem\u003efoudres\u003c\/em\u003e, with a strong preference for fine-grained wood from forests in cold areas such as Vosges, Nièvre and Allier. In keeping with the goal of producing wines without artifice, all wines are finished with minimal dosage levels.\u003c\/li\u003e\n\u003c\/ul\u003e\n\u003cp\u003e55% Chardonnay, 25% Pinot Meunier, 20% Pinot Noir. Direct press and selection of the first juices; cold settling for 12 to 24 hours without enzymes before alcoholic fermentation to extract more aromas, then the juice is put into barrels. Fermentation in barrels with frequent lees stirring and regular topping up.
