Variety: Syrah Organic:Certified

Vineyard: Terraced vineyard planted in 1974, the farm's oldest vines.

Soil: Grantic soils

Viticulture: Organically farmed, all fruit is hand harvested. Strewn throughout the terraced vines are fruit trees, lilacs and wild herbs.

Vinification: Destemmed, 3 week concrete vat vinification with no SO2; daily pump over then cap punching by foot, press wine is assembled.

Aging: Aged in a combination of 80% neutral demi-muids and 20% old barrels for 12 months, then 3-4 months en mass in tank before bottling unfined and unfiltered, without SO2.

Notes: "Chemin Faisant" or "On the Way" is a complex St Joseph with peppery aromas on the nose followed by gorgeous depth and freshness. Structure and finesse reign supreme in this beautiful bottle. Sans soufre cuvée.
